Akmē
A purposeful transformation
Akmē is a sibling restaurant to the world-renowned Sushi Anaba, led by head chef Mads Battefeld. This fresh new Japanese-French restaurant took over the premises of Sushi Anaba, under the guidance of two talented young chefs, Emil Hassan Lyngbæk and Valdermar Junge Norvang.
The main driving force behind akmē’s design was to transform and breathe new life into old elements. Remarkably, not a single piece of new wood was purchased for the build. Through bold thinking and purposeful design, OEO Studio, successfully transformed a culinary landmark into a new destination. In addition to bespoke pieces crafted from repurposed materials from the old Sushi Anaba, very few new items were commissioned. Highlights include a 600-kilogram granite stone, meticulously chiseled to integrate with a timber lounge table in the adjacent area; a stunning window light/art installation by Natural Material Studio; and custom cast bronze door handles.
